Jane's Best Sugar Cookies

Makes 2 Dozen Jane Austen Cookies

1/2 C soft Butter

3/4 C Sugar

1 Egg

1 tsp Salt

3/4 tsp Vanilla

1/2 tsp Baking Soda

2 Cups

Mix all ingredients except flour until well blended. Add in flour and mix until incorporated.

Roll out to 1/4" thickness on floured surface.

Cut and bake at 375* for 6-8 minutes.

Remove from oven and let cool 1 min before removing to cooling rack.

If cookies spread during baking, recut while warm, before removing to cooling rack, to ensure a clean edge.

Alternatives:

Add 1 1/2 tsp Cinnamon and 1/2 tsp nutmeg for a "Spice" cookie

OR

Substitute Lemon flavoring for Vanilla and add 1 Tbsp grated Lemon Peel

OR

Substitute Orange flavoring for Vanilla and at 1Tbsp grated Orange Peel (this variation is great when dipped in chocolate after cooling!!)
